Recipe for making biryani on a pan:
Ingredients:
2 cups Basmati rice
1 lb chicken (bone-in or boneless, cut into pieces)
1 large onion, sliced thinly
3-4 green chillies, slit lengthwise
1 tablespoon ginger garlic paste
1 cup plain yogurt
1/2 cup chopped fresh mint leaves
1/2 cup chopped fresh cilantro leaves
1 teaspoon red chilli powder
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1/4 teaspoon garam masala powder
1/4 teaspoon nutmeg powder
3-4 cloves
3-4 green cardamom pods
1 cinnamon stick
1 bay leaf
1 teaspoon salt
3 tablespoons cooking oil
4 cups water
Instructions:
Wash the rice thoroughly and soak it in water for about 30 minutes.
Heat oil in a large pot over medium heat. Add onions and fry until golden brown.
Add chicken to the pot and fry until it turns white on all sides.
Add ginger garlic paste and green chillies to the pot and fry for a minute.
Add yogurt, mint leaves, cilantro leaves, red chilli powder, turmeric powder, cumin powder, coriander powder, garam masala powder, nutmeg powder, cloves, green cardamom pods, cinnamon stick, bay leaf, and salt. Mix everything together and fry for a few minutes until the spices are well combined.
Drain the water from the soaked rice and add it to the pot. Mix well.
Add 4 cups of water to the pot and stir everything together.
Cover the pot with a tight-fitting lid and cook on medium heat for about 15-20 minutes until the rice is cooked and the water has evaporated. You can also check if the rice is done by inserting a fork into the rice to check if it's soft.
Turn off the heat and let the biryani sit for about 10 minutes before serving.
Serve hot with raita or any side dish of your choice.
