Recipe for a delicious chocolate cake with white icing on top:
Ingredients for the chocolate cake:
2 cups granulated sugar
1 and 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
Ingredients for the white icing:
1/2 cup unsalted butter, softened
2 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract
Instructions:
Preheat your oven to 350°F (180°C) and grease two 9-inch round cake pans with cooking spray or butter.
In a large mixing bowl, whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt until well combined.
Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and beat on medium speed until well combined, about 2-3 minutes.
Slowly pour in the boiling water, and continue to mix until the batter is smooth.
Pour the batter evenly into the two prepared cake pans.
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Remove the cakes from the oven and let them cool in their pans for about 10 minutes before removing them from the pans and letting them cool completely on a wire rack.
To make the white icing, beat the softened butter in a mixing bowl until it becomes creamy.
Add the powdered sugar, milk, and vanilla extract to the bowl and mix on low speed until the ingredients are combined.
Once the ingredients are combined, increase the speed to medium-high and continue to mix until the frosting is light and fluffy.
Once the cakes have cooled, place one cake on a serving plate and spread a layer of white icing on top of it.
Place the second cake on top of the first and spread more white icing on top of it.
Decorate the top of the cake with additional white icing, as desired.
